Cider/Cider is a bottle for any and every occasion. It’s light enough to accompany brunch, refreshing enough to pound on a hot day, elegant enough to start a special meal, and versatile enough to study alone. Fermentation takes place in stainless steel where the cider continues to age on its lees before bottling without fining or filtration. 2018’s final cider/cider is bottle conditioned to produce a lightly sparkling, mineral driven cider with bright, punchy acidity.
Each year this cuvée is a blend of Rhode Island Greening & Northern Spy apples grown in NY's Lake Ontario region. Both Rhode Island Greening and Northern Spy are native northeastern varieties, once celebrated for their various culinary and cider uses but have become increasingly rare. They are showcased in Cider/Cider each year to highlight the native varieties important to the region that mark the beginnings of quality for cider production amongst the region's various heirloom cultivars. 7% ABV.
