Two hours North of Rome, the hilltop town of Collazzone is in the heart of Umbria, and part of the recently awarded DOC of “Rosso di Todi”, on the Southern border of the DOCG of Montefalco Sagrantino, and it is where Lorenzo di Monaco makers his wine. His red is a blend of Sangiovese, Colorino, and Malvasia Nera, which contribute to the almost inky quality of this wine and create both structure and a lovely balance of acidity and tannins. Would pair wonderfully with beef, veal, poultry, and a variety of pasta dishes.
